These chickpea and almond burgers make a great meat free, cruelty free burger. The carrot helps bind the mixture and prevents the patties from being too dry. High in fibre, with healthy fats including omega 3’s from the flaxseed, these are super quick and easy to make. A true happy meal!
Chickpea and Almond Burgers:
1 Can/400g Chickpeas, drained and rinsed
1 Carrot, grated
1 Cup Ground Flaxseed
½ Cup Ground Almonds
½ Cup Coriander, chopped
2 Tbsp. Olive Oil
½ Red Onion, chopped
1 tsp Cayenne Pepper
- Put all of the ingredients into a food processor and blend until the mixture becomes a paste
- Divide the mixture into 4-6 portions and form burger shaped patties
- Pan sear them for a few minutes on each side until golden brown
- Serve with sweet potato wedges and salad, or in a bun stacked with salad, avocado and hummus.
