Not all salads involve boring iceberg lettuce leaves! This green lentil and pea salad is protein packed (about 20g!) and has lots of healthy fats from the pumpkin seeds and avocado.
It’s such a super quick lunch to prepare and the avocado and hummus give a creamy texture to the dish. This salad will leave you full up and nourished!
Green Lentil and Pea Salad
1 cup frozen peas
1/2 tin green lentils, rinsed and drained
1 tbsp pumpkin seeds
1 tbsp hummus
black pepper, to taste
- Cook the frozen peas for a few minutes, avoiding overcooking/boiling
- Add the green lentils and stir together with the peas
- Top with hummus, pumpkin seeds and grind some black pepper on top.
That’s it! Not really much cooking, more just assembling!
