These raw carrot cake bites are a perfect sweet treat or healthy on the go snack to give you a boost of energy, and they are so easy and quick to make. You can use pecans or raisins as substitutes, and add more or less orange zest if you wish.
Raw Carrot Cake Bites:
200g Dates, pitted
1 Carrot, grated
½ tsp Cinnamon
½ tsp Ground Ginger
Grated Zest of ½ Orange
- Put all of the ingredients except for the desiccated coconut into a food processor and blend. You may need to scrape down the sides a few times until it’s all coarsely blended together.
- Divide the mixture into small portions and roll into ball shapes
- Roll the bliss balls in the desiccated coconut. Pop them in the fridge until ready to serve, or just begin eating!
